Vanilla Ice Cream Cake

Ingredients

  • 1,5 quarts of vanilla ice cream
  • 1 cup of frozen mixed berries (such as strawberries, blueberries, and raspberries)
  • 2 cups of crushed cookies or graham crackers
  • ½ cup of melted butter
  • Whipped cream and fresh berries for garnish (optional)

Instructions

  • Take the vanilla ice cream out of the freezer and let it soften for a few minutes.
  • In a bowl, mix the crushed cookies or graham crackers with the melted butter to create the crust.
  • Press the crust mixture into the bottom of a springform pan to form an even layer.
  • Spread a layer of softened vanilla ice cream over the crust in the pan.
  • Sprinkle the frozen mixed berries over the ice cream layer.
  • Add another layer of softened vanilla ice cream on top of the berries and spread it evenly.
  • Cover the pan with plastic wrap and freeze the cake for at least 4 hours or until it’s firm.
  • Once the cake is frozen, remove it from the springform pan and transfer it to a serving plate.
  • If desired, garnish the cake with whipped cream and fresh berries before serving
