Take the vanilla ice cream out of the freezer and let it soften for a few minutes.
In a bowl, mix the crushed cookies or graham crackers with the melted butter to create the crust.
Press the crust mixture into the bottom of a springform pan to form an even layer.
Spread a layer of softened vanilla ice cream over the crust in the pan.
Sprinkle the frozen mixed berries over the ice cream layer.
Add another layer of softened vanilla ice cream on top of the berries and spread it evenly.
Cover the pan with plastic wrap and freeze the cake for at least 4 hours or until it’s firm.
Once the cake is frozen, remove it from the springform pan and transfer it to a serving plate.
If desired, garnish the cake with whipped cream and fresh berries before serving
